FARMING

Our vineyard is not perfectly manicured. We do not till and you will find lots of weeds. This is intentional and part of re-thinking the way we farm. Inspired by regenerative farming, we have begun to farm in ways that consider our vineyard’s entire ecosystem. By building a healthier ecosystem we grow healthier vines that are more resilient to mildew, pests and climatic instability. We are just at the beginning of this new journey, with much more to learn but we believe that we can restore health and balance to our ecosystem through biodiversity, enriching microbial and fungal life in our soils, growing beneficial cover crops and reducing our inputs.

WINEMAKING

Our farming informs our winemaking. We believe a healthy ecosystem results in healthier yeast and microbe populations which result in more complex and alive spontaneous ferments. We keep our winemaking minimal to maintain this diverse ecology in the wines and to express the place it is grown in the clearest way possible. We do not inhibit malolactic fermentation. We do not fine or filter. We do not take away or add anything except small amounts of sulphur when necessary. Creating parameters for ourselves by doing “less” to our wines forces us to be more creative and attentive.
